Accompanied by a curator's talk, the meal (featuring ingredients such as quails eggs, wild garlic, trout and watercress to name a few) was both a symbolic and visual reflection of the heron and its spring habitat. Conceived by Emma from Season Supper Club, the menu also paid tribute to the letter by John Berger 'The Herons', which forms the bedrock to the exhibition and the themes explored, by ensuring all ingredients were seasonal and locally sourced - a nod to Berger's emphasis on slowing down and paying attention to the world around us. 

One of the suppliers was Secret Smokehouse who very kindly provided the smoked trout. Based in London Fields, Hackney, it is the first and only smokehouse in the world to be certified as a B-Corporation - a growing movement that is reinventing business for the benefit of people and the environment.
